Simple Salmon Patty Recipe
Ingredients for 2 patties:
1 can wild salmon (I use SafeCatch because they test for mercury)
1/2 cup chickpea flour
1/2 tsp. sea salt
1/2 tsp. garlic powder
1 TB avocado oil
Directions:
Add wild salmon to medium size bowl and smash with a fork. If you have a cat, give them a small bite (my cat goes wild for salmon and can hear a can open from a mile away).
Add chickpea flour, sea salt, garlic powder, and avocado oil and mix to combine. Dough will be slightly sticky, but dry enough to form a patty. If it is too sticky to form a patty, add a bit more flour (different brands of salmon will have different amounts of liquid in them).
Split dough in half and form into patties.
Heat up cast iron pan or nonstick skillet with a light layer of avocado oil on medium to high heat. Once warmed up (about a minute or so), add patties to pan. Cook for about 4 minutes on first side, flip, and cook for another 3 minutes on the other side. Check to make sure they’re not burning.
Serve on a bun, lettuce wrap, or in a salad bowl.
