Whole Broiled Cauliflower Recipe
This is my first time making this, and it was a success. It’s pretty fail-proof, as long as you keep an eye on it in the broiler. You can get creative with the seasonings and play around with flavors.
So, here’s what you do:
Cut off the bottom of the cauliflower (leaves and stalk).
Add an inch or two of water to the bottom of a large pan (big enough to fit the cauliflower). Bring the water to a boil.
Add cauliflower to boiling water.
Cover and steam for about 8 minutes.
While that is steaming, whisk up: 1/4 cup avocado oil, 2 TB za’atar, 1 TB tahini, 1 tsp. garlic powder, 1/4 cup finely chopped cilantro, 1/2 tsp. sea salt, a sprinkle of smoked paprika, and the juice of half a lemon.
Turn on the broiler to high.
Remove cauliflower from pan and transfer to a parchment lined baking pan. Brush and evenly coat the cauliflower with the sauce.
Put pan in broiler. Broilers are all a bit different so you will want to keep an eye on it. Mine was perfect after about 12-14 minutes.
Serve with drizzling sauce of choice. I made a homemade tzatziki sauce (grated cucumbers, garlic, lemon, fresh mint, chopped green onions, coconut yogurt, and sea salt).
